We select the best grapes from low production strains of our own Pinot Noir vineyards, with a planting density of 4,000 plants per hectare.
The grapes are harvested in special boxes of 15 kg each. I only know Harvest in the morning to maintain a good temperature in the grapes until arrival at the winery. Once in the cellar the boxes are deposited filled with grapes in a cold room, keeping the grapes at -10ºC.
We select box by box and proceed to destemming and crushing.
We place all the resulting grape paste in a steel tank stainless steel with cooling system to subject the grapes to maceration cold film (0ºC) for barely two hours.
Next we pass the grapes to the pneumatic press to carry out a light pressing of no more than 0.5 bar. The must that is extracted from the press we decant it 24 hours statically and then only
We take the clean part of the must to ferment in the new barrels of American oak with a unit capacity of 400 liters at a temperature of 16 ° C. Once the fermentation is finished, it is kept on lees until its bottling.
Serve at 8-10ºC. Any precipitate that can be seen in the wine is natural, since we try to make the wine with the least possible filtration in order to fully appreciate all its quality.
Color: Elegant pale rose gold.
Aroma: High intensity with hints of red and tropical fruit with slight subtle vanilla background.
Flavor: Intense, with good volume in the mouth and very good acidity, leaving a memory of red fruit with a slight lactic touch in the final aftertaste.
Accompany it with pasta, rice with vegetables and chicken, soft cheeses, tortillas, fruit salad.
