Monte Enebro is a soft cheese with a moldy rind, made with pasteurized goat’s milk of impeccable bacteriological quality. It is distinguished by its unusual creaminess, by the pure and delicate flavor of goat’s milk, as well as by a subtle acidity.
The immaculate whiteness of the pasta contrasts with the rind covered with blue mold, the so-called penicillium roqueforti, typical of the interior of blue cheeses. Its format, known as “mule leg”, is tubular, elongated and cylindrical.
